Making delicious dinner in less than 45 minutes is their goal!  This week, we are taking a stab at sandwiches.
Recipe 1: Greek Grilled Cheese
“A Greek influenced spin on the great American classic grilled cheese. Simple, easy and so scrumptious. Great with pita chips and hummus. Add bell pepper, or substitute your favorite bread or cheese. These are also delicious cooked on a Panini grill.”  A comment from one of the subscribers, this Greek-influenced style of sandwich will have you wanting seconds.
Ingredients:

  • 1 ½ teaspoons butter, softened
  • 2 slices whole wheat bread
  • 2 tablespoons crumbled feta cheese
  • 2 slices cheddar cheese
  • 1 tablespoon chopped red onion
  • ¼ tomato, thinly sliced


Directions

  1. Heat a skillet over medium heat. Butter one side of each slice of bread. On the non-buttered side of one slice, layer the feta cheese, Cheddar cheese, red onion and tomato. Top with the other slice of bread with the butter side out.
  2. Fry the sandwich until golden brown on each side, about 2 minutes per side. The second side always cooks faster.


Recipe 2: Cuban Midnight Sandwich
“This sandwich is called a ‘Media Noche’ which translates to ‘Midnight.’ It makes a wonderful dinner sandwich because it is served hot. A nice side dish is black bean soup or black beans and rice, and plantain chips.” Another comment from a subscriber, this fun and festive spin on grilled ham cheese will have you saying ‘mmm’!
Ingredients:

  • ½ cup mayonnaise
  • 5 tablespoons Italian dressing
  • 4 Hoagie rolls, or other buns
  • 4 tablespoons mustard
  • ½ pound thinly sliced deli meat
  • ½ pound thinly sliced cooked ham
  • ½ pound thinly sliced Swiss cheese
  • 1 cup thin dill pickle slices
  • ½ cup olive oil


Directions

  1. In a small bowl, mix together mayonnaise and Italian dressing. Spread mixture on hoagie rolls. Spread each roll with mustard. On each roll, arrange layers of turkey, ham, and cheese. Top each with dill pickle slices. Close sandwiches, and brush tops and bottoms with olive oil.
  2. Heat a non-stick skillet over medium high heat. Place sandwiches in skillet. Cook sandwiches for 2 minutes, pressing down with a plate covered with aluminum foil. Flip, and cook for 2 more minutes, or until cheese is melted. Remove from heat, place on plates, and cut in half diagonally.
