With the biggest love fest in the past, we look forward to St. Patrick’s Day and April fool’s day coming up in the spring.  Transitioning from bleak weather to warm and refreshing breeze can be easy for your wardrobe but tricky for your meals.  All recipes taken from Allrecipes.com.
Recipe 1: Holiday Chicken Salad
This festive chicken salad will lighten the mood and allow you to personalize it to your favorite spices.
Ingredients:
4 cups cubed, cooked chicken meat
1 cup mayonnaise
1 teaspoon paprika
1 1/2 cups dried cranberries
1 cup chopped celery
2 green onions, chopped
1/2 cup minced green bell pepper
1 cup chopped pecans
1 teaspoon seasoning salt
Ground black pepper to taste
Directions:
In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.
Recipe 2: Mango Sorbet
It’s never too early or too cold to have frozen desserts.  Try this super-simple mango sorbet to add some oomph to your meal.
Ingredients:
4mangos – peeled, seeded, and cubed
1 cup simple syrup
3 tablespoons fresh lime juice
Directions:
1. Place cubed mango in a food processor, and puree. Pour in simple syrup and lime juice, and puree until smooth.
2. Place in an ice cream maker. Freeze thoroughly.
